Valentine’s Day Wine Dinner with Ricochet & Trellis Dundee

Dive deep into our Single-Vineyard wines and take a “tour through taste” of library vintages alongside current releases, and sample future vintages straight from the barrel.

Trellis Dundee will craft a coursed pairing menu to complement this exploration of our reserve releases. The menu for the evening includes:

Amuse-Bouche ~ Potato crisp with creme fraiche & salmon roe

Appetizer ~ Wild mushroom tart with chevre, crushed hazelnuts, saba & farm fresh micro greens

Salad ~ Winter salad with delicata squash, roasted beets, pomegranate seeds, feta with a pomegranate vinaigrette

Entree ~ Bone-in braised short ribs with crispy sunchokes, celery root puree & winter mushroom demi glace

Dessert ~ Dark chocolate mousse with lavender chantilly cream & sea salt
